What if it was easy to find Real Food late at night out on the town? What if there were high end street vendors?
Real Food is food that is raised and grown in the way it should be grown. No weed killers or synthetic fertilizers, no growth hormones, just plants and animals growing as nature intended. And then cooked and prepared naturally- no seed oils, no microwaving, no riff raff.
I did a test run last week- butchered a chicken, put some meat on a skewer, cooked it on my Konro with Binchotan charcoal, and served it to my friend Hannah who said “That is the best chicken I’ve ever had”.
If I build it, they will come. If I cook, they will eat.
The Experiment: Set up my Japanese Konro grill in a busy part of town on a Friday night and sling some meats. I have 10 big, pasture raised chickens from a Silver Sky ranch in Petaluma, some peaches and pears from Full Belly Farm, and a funky varietal of apple called “Ashmeade’s Kernel” from Devoto Gardens.
Looking at the ripple effect of this- Best case scenario I sell 150 skewers (2.5oz chicken + fruit). Average of two skewers per person, means that I provided local, sustainably sourced food to 75 people. 75 people who buy food that supports local farmers and ranchers! And what if I am able to convince a few of them to start sourcing more food sustainably? Then those few convince a few of their friends and 75 people grows to 75,000 and within a few years we transform the American food system.
The only thing that is left for me to do? Sell these skewers! Phase One kicks off this Friday, Sept.27th, 2024, in the Marina District of San Francisco at 730pm. See you there.
